Jello shots

Tonight, I'm going to see Thievery Corporation at the 9:30 Club.  If Friday wasn't booked with several appointments, I'd consider whipping up another batch of these ingenious jello shots from not martha.  

I made this batch of lemon drops and mojitos for a party in December.  In the mad rush of the holidays, I didn't have an opportunity to give you the 411.  

The premise is simple:  make your liquor mix with gelatin and insert liquid in hollowed out lemon and lime halves.  Chill overnight.  Slice in wedges and let the fun begin.

The overwhelming favorite was the lemon drop shots.  The lime rind can be bitter. Although I followed the recipe exactly for the mojitos, they needed more sugar to offset the bitterness.

Lemon Drop Jello Shots

2 ounces of fresh lemon juice

2 ounces of water

5 or 6 tablespoons of sugar

1 package Knox gelatin

3 ounces vodka

Combine lemon juice, water and sugar in a small saucepan.  Sprinkle one package of gelatin over the top and let bloom for one minute.  Heat over low heat and stir for about 6 minutes, until the gelatin has totally dissolved.  Add vodka, stir and pour into prepared lemon halves.  It will fill 4 to 6 halves.  Chill thoroughly, overnight if possible.
