tasty tidbit

DC is having an unprecedented stretch of good weather.  It's been so lovely, I've begun my outdoor entertaining.  Last night, I had a couple of friends come over for the first cook out of the year.  In March!  On the menu were the standards: hamburgers, hot dogs, grilled zucchini, asparagus plus my new favorite side dish: carrot slaw.  It's easy, delicious and good for you.  It's also yummy as a condiment on the hot dogs and hamburgers.  

Carrot Slaw

12 ounces of carrots (assorted colors if you're feeling fancy), peeled and julienned. (about 4 cups.  we use the       cuisinart for this task)

3 tablespoons olive oil

4 to 5 limes, juiced

1 1/2 teaspoons sugar

1/2 teaspoons salt plus more for seasoning

2 jalapenos, stemmed, seeded and minced

1/2 cup (loosly packed) fresh cilantro leaves

fresh ground pepper

Toss carrots, oil, juice from the limes, cilantro, sugar, 1/2 teaspoon salt and jalapenos in a large bowl.  Let marinate for 15 minutes (I like to let it marinate for an hour or more for the best flavor), tossing occasionally.   Season to taste with salt and pepper.
